Tricked Out Grilled Cheese

Those chilly, windy fall nights are here – which means it’s time for comfort foods! One of our all-time favorites is an ooey, gooey crispy grilled cheese sandwich. But what if we told you that we can take your grilled cheese to the next level? 

With caramelized onions, kale, and our Good Foods Queso style dip and Good Foods Avocado Pesto dip make it easy! This stack is 100% plant-based and 200% delicious! 

In case you haven’t heard, these delicious dips are now available at Target! They’re made with real ingredients, are gluten-free and dairy-free, and contain no added sugars or preservatives. Did we mention each serving is only 30-50 calories?

Plus, our entire line of plant-based dips can be used as sauces or a spread and go well with veggies, protein, potatoes, salads, zoodles & more! 

Ingredients:

  • 8 slices of whole wheat bread
  • 1 container of Good Foods Queso Style Dip
  • 1 container of Good Foods Avocado Pesto Dip
  • 1 1/2 cup of kale leaves washed, trimmed and chopped thinly.
  • 1 medium yellow onion. Peeled and sliced.

Instructions:

  1. In a pan, heat 1 tbsp of avocado oil and sautéed sliced onions until they are caramelized. Add chopped kale and sauté for about 3-4 min. Add a container of queso dip, bring it to boil and simmer for 3 min.
  2. Assemble Grilled Cheese sandwiches. Spread some Avocado Pesto sauce on each slice of bread. Fill one toast generously with caramelized onions and kale cheese mixture, cover with another slice of bread. Set aside. Repeat the process with other slices. 
  3. In a pan, melt 1 tsp of vegan butter. Grill each toast for 3 min until golden brown on each side. Enjoy!
