Ingredients:

Meatballs

  • 1 lb ground beef
  • ½ lb ground pork
  • ½ cup sweet onion, finely chopped
  • 6 garlic cloves
  • 1 ½ tsp oregano
  • 1 tsp all-purpose Greek seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • 1 large egg, lightly beaten

Farro and assembly

  • 2 cups farro
  • 4 cups water
  • 4 cups chicken stock
  • 2 tsp all-purpose Greek seasoning
  • 1 cucumber, diced
  • 2 Roma tomatoes, diced
  • 3 tbsp Good Foods™ Tzatziki style dip
  • Parsley, chopped (optional)
  • Lemon juice (optional)

Directions:

  • Preheat oven to 400°. Line a rimmed baking sheet with aluminum foil. Place a wire rack over foil.
  • Add beef, pork, onion, garlic, oregano, Greek seasoning, salt, pepper and egg to a medium bowl and mix by hand until well combined.
  • Shape mixture into approximately 12 – 1 ½ inch balls; place on wire rack.
  • Bake 20 minutes or until cooked through and golden brown.
  • While meatballs are baking, rinse 2 cups farro and drain. Combine water and chicken stock in a pot and bring to a boil. Reduce heat and simmer for 20 minutes. Drain any remaining liquid.
  • Add Greek seasoning to farro, stir.
  • Combine farro, meatballs,cucumber, tomato and tzatziki dip in a bowl.
  • Garnish with chopped parsley and a squeeze of lemon juice.

EGGPLANT TZATZIKI FRIES 

Our delicious eggplant tzatziki fries shared here, are the perfect appetizer for any party. Our tzatziki dip is made with fresh herbs and cucumbers in a light, creamy cashew yogurt-like dip. And, of course, all Good Foods products are made with 100% fruits and veggies, no artificial ingredients, and no added sugar.

EggplantTzatzikiFries

Ingredients:

  • 1 medium eggplant
  • 1 cup panko crumbs
  • ½ cup Parmesan cheese
  • 1 tsp oregano
  • 1 tsp all-purpose Greek seasoning
  • ¾ tsp garlic powder
  • ¾ cup all-purpose flour
  • 2 eggs, lightly beaten
  • Good Foods™ Tzatziki Style Dip

Directions:

  • Preheat oven to 425°. Line a rimmed baking sheet with parchment paper and coat with cooking spray.
  • Cut the eggplant into 1-inch thick rounds, then cut rounds into ½ -inch wide sticks.
  • Mix panko crumbs, parmesan, oregano, Greek seasoning and garlic powder in a medium-sized bowl.
  • Dredge eggplant fries in the flour. Next, dip them in the egg, then in panko mixture, turning to coat all sides. Place on paper-lined baking sheet.
  • Bake for 8-10 minutes, turning halfway through baking time. Broil for 2-3 minutes until crispy and brown.
  • Serve warm with tzatziki dip.
